6 Delicious Baingan Masala Prepared by Mrs. Ruksana Bano Mrs. Ruksana Bano Star Director Assam F R OM T H E K I T C H E N O F • 3 tbsp LITE HOUSE Rice Bran Oil • 1 Mustard Seeds/Rai • 1 tsp Urad Dal • ½ tsp Chana Dal INGREDIENTS: • Few Curry Leaves • 1 Onion (sliced) • 2 Green Chilli (slit) • 1 Tomato (finely chopped) • ¼ tsp Turmeric/Haldi • Salt as per taste • 1 Baingan/Eggplant (chopped) • 2 tbsp Coriander (finely chopped) METHOD: • Firstly, in a large kadai heat 3 tbsps of LITE HOUSE Rice Bran Oil and splutter 1 tsp mustard seeds, 1 tsp urad dal, ½ tsp chana dal and few curry leaves. • Add 1 sliced onion and saute. Also add 2 green chilli and saute well. • Additionally, add 1 chopped tomato and saute until tomatoes turn soft and mushy. • Furthermore add ¼ tsp turmeric powder and salt as required. Saute well. • Now add 1 chopped baingan/eggplant and mix gently. • Do not over mix, as baigan will get mushy. • Cover and simmer for 10 minutes or till baingan turns slightly soft. • Stir occasionally while making sure the baingan doesn't burn. • Cover and cook till the baigan cooks well and releases oil. • Add 2 tbsps of fresh green coriander leaves and mix well. • Serve Baigan Masala recipe with rice or roti.
