6 Sunday Funday Recipe: Show some LOVE for Ice-Cream Cake Cups HEALTHY Sunday FundayKids with Sunday Funday with Kids is curated especially with recipes that are for kids and youngsters who are keen to cook for their near and dear ones. These recipes require no gas stoves that are fun for teens and children who love cooking. Family time is full of fun when everyone sits together but today because we all are so busy with our schedules, tend to forget. So let’s remember those times and spend some quality time with family. • dry cake (any flavour) • ice cream (any flavour) • fresh fruits/brownie nuggets/choco chips INGREDIENTS: • Firstly, take a large bowl and crumble the dry cake of your choice unevenly. • Take the ice cream of your choice. • In the ice cream bowls, layer by layer, place the crumbled cake at the bottom. • Then a layer of ice cream. Spread the ice cream nicely over the crumbled cake. • Then repeat the process until the bowl is half full. • In the center layer put some fresh fruits or brownie nuggets or choco chips with ice cream for a little nutritious twist. • Make sure the top layer must be of ice cream and not the cake. • Garnish with fresh fruits or brownie nuggets or choco chips. • Your Ice-Cream Cake Cups are ready to be served immediately. METHOD: • In a mixer grinder jar, grind together banana and milk. Make a smooth paste/puree. • Pour the puree in a large bowl. • Add maida, baking powder, baking soda, salt, sugar, vinegar, and LITE HOUSE Rice Bran Oil. Whisk everything very well leaving no lumps in the mixture. • You can add more milk if required to smoothen the batter and balance the flowy consistency. • Grease a non-stick pan with LITE HOUSE Rice Bran Oil and pour ¼ cup of the pancake mixture. Make sure the pan is medium-hot. • Cook for at least 1 minute or until the bubbles show on the surface. • Cook both sides until golden brown. • Repeat this with the rest of the batter. • Your Banana Pancakes are now ready to be served hot with maple syrup or chocolate syrup with fresh fruits. Healthy Paneer Pancakes Prepared by Ms. Sonika Gupta 8 Ms. Sonika Gupta Bronze Director F R OM T H E K I T C H E N O F • 1 cup grated paneer • 1 cup coarse semolina • salt as per taste • ¾ cup curd • ½ cup water • 2 tbsp LITE HOUSE Rice Bran Oil • ½ tsp Eno fruit salt • ½ finely chopped onion • 2 tbsp peas • 1 chopped carrot • 2 tbsp sweet corn • ½ tsp pepper powder • 2 tbsp chopped capsicum • ½ tsp chilli flakes INGREDIENTS: METHOD: • In a large bowl, take semolina, curd, and salt as per taste. Mix well and make sure everything is well combined. • Add water and mix again well making sure there nare no lumps. Cover and rest for at least 10 minutes. • In a pan, heat LITE HOUSE Rice Bran Oil and sauté onions until shrink. • Add carrot, capsicum, sweet corn, and peas. Stir fry keeping everything crunchy. • Further add salt as per taste, pepper powder, chilli flakes, and paneer. Mix well. • Let the paneer mixture cool down and transfer the mixture to the semolina batter. • Mix well making sure it is well combined. • Now add Eno and water. Mix nicely. • Take a frying pan and heat some LITE HOUSE Rice Bran Oil. • Add the paneer semolina batter and spread uniformly on the hot pan. • Cover and let it simmer for 2 minutes or until one side looks cooked and brown. • Flip over and let it cook until brown on medium flame. • Repeat the same procedure for the rest of the batter. • Your Paneer Pancakes are ready to be served with green mint chutney. Mix well until everything is well combined. • Add milk and knead well until a smooth dough is formed. • Place the dough on a butter paper. Flatten slightly and place another butter paper over it. • Roll slightly thick and make sure the thickness is uniform. • Remove the butter paper and keep aside. • In a large kadhai, heat some LITE HOUSE Rice Bran Oil. • Add milk, sugar, and milk powder. Stir continuously until the milk powder dissolves. • Cook until the mixture thickens. • Transfer the mixture over the rolled biscuit dough and spread uniformly. • Place the butter paper over it and roll slightly making sure it is uniformly thick. • Remove the butter paper and start rolling from one end making sure there is no gap in between. • Wrap in an aluminium foil and seal both the sides. • Refrigerate for at least 30 minutes or until it is set properly. • Slice the roll into neither thick nor slim pieces. • Your Eggless Biscuit Swiss Rolls are ready to be served immediately.
