Family time is very important and precious, and today, with our busy schedules we tend to miss this time and are busy in our work. Let’s work on creating a funday with our kids and enjoy the Sunday. This month’s recipe is a quick and delicious Oreo ice cream. Kids love such recipes. The best part is there is no fire involved. Enjoy your lazy weekends spending time with kids with this delicious dessert. • Take a bowl and add ice cream to it. • Crush the Oreo biscuits roughly. • Mix the biscuits and ice cream together. • Add crushed wafers in the ice cream mixture. • Serve chill in cones or cups. • 2 packets Oreo chocolate biscuits • Chocolate syrup • Vanilla ice cream • Ice cream cones • Wafers, crushed METHOD: INGREDIENTS:

• In a large cooker, heat LITE HOUSE Rice Bran Oil and sauté the whole spices. • Sauté onions and ginger-garlic paste well. • Add in the mixed vegetables and cook till all the vegetables shrink. • Add in curd while keeping the flame on low. • Add in all spice powders and salt to taste. Mix well. • Also add in coriander leaves, mint leaves and fried onions. • Spread soaked basmati rice over the vegetable mixture and sprinkle biryani masala powder and salt. • Garnish with coriander leaves, mint and fried onions, then pour in saffron water and ghee. • Add water, cover and simmer for 25 minutes. • Serve the biryani along with raita. 6 F R OM T H E K I T C H E N O F Sweet and delightful, detoxifying Coffee & Chocolate Cake Prepared by Bharti and Gopal Pahwa INGREDIENTS: • 2 cups white flour • 1.5 cups sugar • 1/4 cup LITE HOUSE Rice Bran Oil • 1/2 tsp baking soda • 1/2 tsp baking powder • 1 cup curd • A pinch of salt • 2 tbsp Zeta Premium Coffee • 2 tbsp Invigo Nutritional Protein Powder METHOD: Using a Microwave • Add all the ingredients in a bowl and stir well. • Stir for at least 10 minutes until it becomes a smooth batter. Make sure there are no bubbles. • Put this batter in pre-heated microwave oven for 10 to 15 minutes. • This tasty and healthy cake is ready to eat! In an open vessel • Add a bowl of salt and preheat the vessel. • Make the batter as in the steps above. • Place the batter bowl inside the preheated vessel and let it steam for 20 to 25 minutes at low flame. • Check the cake with a toothpick. 7 Paneer Butter Masala Prepared by Ms. Jolly Suri. • 2 tsp LITE HOUSE Rice Bran Oil • 1 bay leaf • ½ inch cinnamon stick • 3-4 cloves • 6-7 large garlic cloves, roughly chopped • 1.5 inch ginger, roughly chopped • 1 large onion, roughly chopped • 3-4 large tomatoes, roughly chopped • 10-15 whole cashews • 1 cup water • 2 tbsp unsalted butter Jolly Suri Universal Crown Director Bhopal (M.P.) F R OM T H E K I T C H E N O F • 1 tsp red chilli powder • ½ tsp garam masala • ¼ tsp cardamom powder • 1 tsp sugar • ¾ tsp salt or to taste • ½ tbsp tomato paste (optional) • 3-4 tbsp cream • 250 g paneer, cubed • 2 tsp crushed kasuri methi • chopped coriander, to garnish • Heat 1 teaspoon LITE HOUSE Rice Bran Oil in a pan on medium heat. Once the oil is hot, add the bay leaf, cinnamon stick and cloves and sauté for a few seconds. • Add the onion, garlic, ginger and sauté for 2-3 minutes until the onion is translucent. • Add the tomatoes and cashews and mix. • Then, add 1 cup of water. • Cover the pan and cook on medium heat for 15 minutes. • After 15 minutes, remove the pan from heat. Remove the bay leaf, cinnamon stick and cloves. • Let the mixture cool down a bit and then transfer to a blender. • Grind the masala to a smooth paste and set aside. • To the same pan, now add 2 tablespoons butter along with remaining 1 teaspoon oil on medium heat. • Once the butter melts, add the red chili powder and fry for few seconds. This will give the curry a nice red colour. • Then add the ground paste back into the pan along with the garam masala, cardamom powder, sugar, salt and tomato paste (if using). Mix well and cook for 1-2 minutes. • Then add the cream and mix. • Add in the paneer and cook for 2-3 minutes on medium heat. Finally, add crushed kasuri methi. • Garnish with chopped coriander and serve hot with naan or rice! METHOD INGREDIENTS
